Chikuwa, Snow Pea, and Sesame Vinegar Miso Mix
- 2 Chikuwa
- 30 pods Snow peas
- 1 tbsp Red miso (sanjirushi - Traditional Japanese restaurant style red miso)
- 1 tbsp Sugar
- 1 tsp Mirin
- 1/2 tsp Vinegar
- 2 tbsp Ground sesame seeds
- Wash the snow peas and remove the fibers.
- Slice the chikuwa into 5 mm diagonals.
- Boil the snow peas in boiling water.
- Turn off the heat once the snow peas have cooked through, and add the chikuwa.
- Immediately drain in a sieve to cool.
- Vinegar Miso Mix the ingredients together.
- After it has all blended together, add the vinegar, and stir well.
- Place the chikuwa and snow peas into seperate bowls.
- Mix in the Miso Vinegar a bit at a time.
- Add the sesame seeds, mix, and it is done.
- If you have leftover miso vinegar, please try with broccoli.
