Apple Custard Squares
- 1 c. flour
- 1 c. sugar
- 3/4 tsp. baking powder
- 1/8 tsp. salt
- 1/2 tsp. cinnamon
- 2 3/4 c. Rice Chex
- 1/2 c. plus 2 Tbsp. margarine
- 3/4 c. sugar
- 1/4 c. flour
- 1/8 tsp. salt
- 1/8 tsp. cinnamon
- 2 eggs, beaten
- 16 oz. vanilla yogurt
- 1 tsp. vanilla
- 3 c. unpared, chopped apples
- Preheat oven to 400u0b0.
- Combine flour, sugar, baking powder, salt, cinnamon and Chex crumbs.
- Remove 1 1/2 cups.
- Set aside. Press remaining mixture firmly into bottom of 9 x 13-inch pan. Bake 5 minutes.
- Meanwhile, combine sugar, flour, salt and cinnamon.
- In another bowl, combine vanilla yogurt and vanilla. Add to flour mixture.
- Mix well.
- Stir in apples.
- Pour over crust. Bake 10 minutes.
- Sprinkle with reserved crumbs.
- Reduce oven to 350u0b0.
- Bake an additional 20 to 25 minutes.
