Savannahs Hearty Meatloaf (Gluten Free)
- 1 teaspoon Cumin
- 1 teaspoon Black Pepper
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- 1- 1/2 cup Regular Oats
- 1 whole Carrot, Peeled, Finely Chopped Or Grated
- 1 whole Onion, finely chopped
- 1 Tablespoon Minced Garlic
- 1 whole Bell Pepper, Stem And Seeds Removed Then Finely Chopped
- 2 whole Eggs
- 2 pounds Ground Beef
- 3/4 cups BBQ Sauce
- 1- 1/2 teaspoon Cumin
- Preheat oven to 350 F.
- In a large bowl combine cumin, pepper, chili powder, salt and oats.
- Add carrot, onion, garlic, bell pepper, and eggs.
- Stir well.
- Incorporate ground beef using a spoon or your (clean) hands.
- Cover the inside of a large 10 loaf pan in foil, leaving a wide over hang of foil on two opposite ends.
- Spray the foil with Pam or other non-stick baking spray or oil.
- Pat meatloaf mixture into the foil lined pan.
- Firmly press it into the pan and then lift it out of the pan by pulling foil edges up.
- Turn it upside down on a broiler pan or a rack that youve placed on a rimmed baking sheet and remove foil.
- This should create a meatloaf shaped like a loaf of homemade bread.
- Bake at 350 F for 45 minutes.
- Combine sauce ingredients in a bowl.
- After 45 minutes of baking, pull the loaf out of the oven and brush sauce over loaf.
- Put it back in the oven and continue cooking for an additional 15 minutes or until an internal temperature of 170 F is reached.
- Total cook time is approximately an hour.
