Texas Beef Brisket
- 5 lb fresh beef brisket
- 1 tsp kosher or regular salt
- 1 tsp Pepper
- 2 tbsp liquid mesquite smoke flavoring
- 1 small onion (1/4 cup)
- 2 tsp finely chopped garlic
- 1/4 cup water
- 1/4 cup lime juice
- heat oven to 325F.
- Trim some of the fat from the beef.
- Rub surface of beef with salt, pepper and liquid smoke, then onion and garlic.
- Place beef, fat side up in shallow roasting pan.
- Mix water and lime juice; pour over beef.
- Cover and bake 4 to 5 hours or until beef is very tender.
- Drain.
- Shred beef, using 2 forks.
