Grilled Scallops
- 16 large scallops, rinsed well
- 4 tsp sugar (or 8 teaspoons sugar substitute)
- 4 to 6 fresh minced garlic cloves (or 1 to 1 1/2 teaspoons minced garlic in a jar)
- 4 green onions, minced
- 2 tsp paprika
- 2 tbsp lemon juice
- 1/2 cup plus 2 tablespoons olive oil, divided
- 1 pepper to taste
- Wash scallops and pat dry.
- Brush with 2 tablespoons olive oil.
- Combine the sugar, garlic, green onions, paprika, 1/2 cup olive oil, lemon juice and pepper.
- Mix well.
- Heat your grill or grill pan to high heat.
- Place the scallops on the grill for 3 to 5 minutes per side, basting generously and frequently with the prepared sauce.
- You want the scallops to be lightly browned on each side.
- Be careful not to leave them on too long, they should be firm but not overcooked.
- Overcooking can make them rubbery.
