Turkey Waldorf Pockets
- 1/2 c. red grapes
- 1/2 c. apple
- 1/2 c. celery
- 4 tbsp. mayonnaise
- 4 tbsp. yogurt
- 4 pita pockets
- 8 large lettuce leaves
- 1 lb. turkey breast
- Mix fruit, celery, mayonnaise and yogurt in medium bowl until well combined.
- Cover and refrigerate for 1 hour, or until youre ready to prepare your lunch.
- Line each pita half with a lettuce leaf and several slices of turkey.
- Stuff with a scoop of chilled fruit mixture.
- Wrap each pocket individually in plastic wrap.
