Avocado-Tequila Linguine

  1. Prepare linguine according to package directions; drain and set aside.
  2. Heat oil in a large skillet and saute the onion and bell pepper for 5 minutes.
  3. Add garlic, jalapeno and cilantro; cook for another 5 minutes or until tomatoes are softened.
  4. Stir feta cheese and avocado into the skillet.
  5. Season to taste with salt and pepper and add to the hot linguine.
  6. Combine thoroughly; adjust seasonings again if necessary.
