Avocado-Tequila Linguine
- 3/4 lb. linguine
- 3 tbsp. olive oil
- 1/2 sm. red onion, finely diced
- 1/2 red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1/2 jalapano pepper, seeded and minced (more if you like)
- 4 tbsp. tequila
- 2 lg. tomatoes, seeded and chopped
- 2 tbsp. fresh oregano, minced
- 1/2 cup cilantro, minced
- 4 oz. feta cheese, crumbled
- 1 avocado, peeled and chopped
- Salt and pepper to taste
- Prepare linguine according to package directions; drain and set aside.
- Heat oil in a large skillet and saute the onion and bell pepper for 5 minutes.
- Add garlic, jalapeno and cilantro; cook for another 5 minutes or until tomatoes are softened.
- Stir feta cheese and avocado into the skillet.
- Season to taste with salt and pepper and add to the hot linguine.
- Combine thoroughly; adjust seasonings again if necessary.
