Mexican Rice And Bean Soup Recipe
- 1 pound pork sausage links
- 1/2 c. minced onion
- 1/3 c. minced green pepper
- 1 clove garlic, chopped
- 3 c. water
- 2 1/4 c. tomato juice
- 1 pound can kidney beans, liquid removed
- 1/2 c. long grain rice
- 1 teaspoon paprika
- 1/2 to 1 teaspoon chili pwdr
- 1/2 teaspoon salt
- Dash of pepper
- Cut sausage links into bite size pcs; brown lightly in large saucepan.
- Spoon off all but about 2 Tbsp.
- of fat.
- Add in onion, green peppers, and garlic; cook till vegetables are tender but not brown.
- Add in water, tomato juice, beans, rice, paprika, chili pwdr, salt and pepper.
- Simmer covered 25 to 30 min or possibly till rice is tender, stirring occasionally.
- Serves 6 to 8.
