Kataifi-Wrapped Prawns with Lemon Oil

  1. In a small bowl combine olive oil and grated lemon peel.
  2. Let sit overnight.
  3. Strain mixture using a fine sieve.
  4. Preheat oven to 400-degrees.
  5. Lightly coat a sheet pan with canola oil.
  6. Slice shrimp 3/4 of the way lengthwise to butterfly.
  7. Roll flat in 1/2-ounce kataifi dough.
  8. Bake for 5 to 7 minutes or until kataifi turns light brown.
  9. Serve with 1-teaspoon lemon oil and 2 tablespoons papaya relish.
