My Passover Muffins
- 2 cups water
- 2 cups matzo meal
- 12 teaspoon salt
- 1 tablespoon sugar
- 5 ounces oil
- 6 eggs
- cooking spray
- Preheat oven to 425 degrees.
- Bring water, oil, salt, and sugar to a boil.
- Remove from heat and add matzo meal and stir until it forms a ball.
- Add eggs, one at a time, until each is blended.
- Divide batter into greased muffin tins.
- Bake 30-40 minutes until golden brown.
- Variation: Spoon batter into muffin cups and place 1/2 teaspoon of jam or preserves in center of each muffin.
- The jam will sink to become filling.
