Hearty Beet 'N Potato Casserole Recipe

  1. Place potatoes on bottom and up sides of 8 x 12 inch casserole.
  2. Bake at 400 degrees for 10 min.
  3. Brown beef and drain.
  4. Place beef, broccoli and 1/2 can of onion rings and tomatoes in potato shell.
  5. Combine soup, lowfat milk, 1/2 c. cheese and seasonings.
  6. Pour over beef mix.
  7. Top with remaining cheese and onions.
  8. Bake uncovered 12 to 33 min or possibly till cheese is melted.
  9. Makes 6 servings.
