Hearty Beet 'N Potato Casserole Recipe
- 4 c. frzn potato rounds
- 1 pound grnd beef
- 1 (10 ounce.) pkg. frzn broccoli
- 1 can French fried onion rings
- 1 med. tomato
- 1 can cream of celery soup
- 1 c. cheddar cheese, shredded
- 1/2 teaspoon garlic
- 1/8 teaspoon pepper
- 1/2 c. lowfat milk
- Place potatoes on bottom and up sides of 8 x 12 inch casserole.
- Bake at 400 degrees for 10 min.
- Brown beef and drain.
- Place beef, broccoli and 1/2 can of onion rings and tomatoes in potato shell.
- Combine soup, lowfat milk, 1/2 c. cheese and seasonings.
- Pour over beef mix.
- Top with remaining cheese and onions.
- Bake uncovered 12 to 33 min or possibly till cheese is melted.
- Makes 6 servings.
