Cod Monterey

  2. Add the chips and spices into the food processor.
  3. Grind until tortillas are a fine consistency.
  4. Pour the mixture onto a shallow dish.
  5. Pour egg into another shallow dish.
  6. Dip fish in egg and then in tortilla chip crust, pressing the chips into the sides.
  7. Add the olive oil to a large frying pan over medium high heat.
  8. Once hot, add fish and cook until golden brown then flip and cook the other.
  9. This will take about 3 minutes per side.

  11. Meanwhile, add beans, rice, green chilies, spices and lime juice into a small saucepan.
  12. Heat over medium heat until warmed through, about 10 minutes.
  13. 3.
  14. Make the crema.
  15. Add avocado, lime juice, cilantro and pepper to a food processor.
  16. Puree until creamy.
  17. 4.
  18. Plate dish.
  19. Place 1/2 of rice and bean mixture on the bottom of 2 plates.
  20. Place a fish fillet on top.
  21. Sprinkle tomato and red onion on top of fish.
  22. Dollop crema on top of fish.
  23. Enjoy!
