Chocolate Mint Pinwheels

  1. Combine sugar, butter, egg, vanilla and peppermint extract in large bowl.
  2. Beat at medium speed, scraping bowl often, until creamy.
  3. Add flour, baking powder and salt; beat at low speed until well mixed.
  4. Divide dough into 2 bowls.
  5. Add cooled melted chocolate to 1 dough; mix well.
  6. Add green food color to other dough; mix well.
  7. Shape each dough into 5x4-inch rectangle; wrap in plastic food wrap.
  8. Refrigerate 1 hour.
  9. Roll out chocolate dough between two sheets of lightly floured waxed paper to 12x7-inch rectangle.
  10. Repeat with green dough.
  11. Place green dough on top of chocolate dough.
  12. Gently press doughs together.
  13. Roll up, jelly-roll fashion, starting with 12-inch side; wrap in plastic food wrap.
  14. Refrigerate at least 2 hours until firm.
  15. Heat oven to 375F.
  16. Cut log into 1/4-inch slices with sharp knife.
  17. Place 1 inch apart onto ungreased cookie sheets.
  18. Bake 7-9 minutes or until set.
  19. Remove to cooling rack; cool completely.
