Freeze This For Your Bento! Basil Chicken Cutlets
- 1 Chicken breast
- 1/2 tbsp Sake
- 1/2 tsp Sugar
- 1/8 tsp Salt
- 1 dash Pepper
- 3 tbsp Olive oil
- 1/2 Beaten egg
- 4 tbsp Cake flour
- 2 and 1/2 tablespoon Water
- 200 ml Panko
- 1 tbsp Parmesan cheese
- 1 tbsp Olive oil
- 1/2 tsp Dried basil
- 1/4 tsp Salt
- 1 pinch Sugar
- How to make the 2 step simple batter: Beat the egg in a bowl and then add in the flour and water and mix well until no longer lumpy.
- How to make the Basil sauce.
- Mix all of the ingredients together for the sauce and then let it sit.
- Cut the chicken breast meat diagonally into 1 cm thick pieces and put them in a bowl with the sake, sugar, and salt.
- Let them sit and marinate.
- This ensures the tenderness.
- Once it has marinated for a while, go ahead and season with salt and pepper.
- Next, coat the chicken with the coating.
- Heat up some olive oil in a frying pan on medium heat.
- Properly fry both sides of the chicken now.
- Be careful not to burn them.
- Once they are done, coat with the basil sauce from Step 2.
- Once they have chilled, put them in a freezer bag and freeze.
- When you're using them in a bento, take out only what you plan to use and heat it up in a microwave on a heat-proof plate.
- If you want to make the flavor a bit richer, sprinkle a little salt and dried basil on it before you put it in the bento.
