Peanut Butter Snack Bars
- 1 cup Peanut Butter
- 1 cup Splenda
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- 1/4 cups Salted Butter, Melted
- 4 Tablespoons Unsweetened Cocoa Powder
- 1- 1/2 teaspoon Liquid Sweetener
- 1 ounces, weight Peanuts, Chopped
- 1.
- Preheat oven to 350 degrees F. Spray a loaf pan with cooking spray.

- Mix all of the bars ingredients together and press into a loaf pan.
- Dampen fingers with water to move and even out the dough.
- 3.
- Bake for 15 minutes, or until slightly browned around the edges.
- 4.
- Let cool, then cut into 6 bars.
- 5.
- Melt butter in the microwave for 30 seconds (heating for additional 30 second increments if needed) and then mix in the cocoa until smooth.
- Stir in liquid sweetener.
- Taste and add more sweetener if needed.
- Spread on top of the peanut butter bars.
- 6.
- Top bars with chopped peanuts and press to adhere.
- 7.
- Freeze bars until firm and store in the refrigerator in an airtight container.
