Beef & Red Pepper Kabobs
- 1/4 cup balsamic vinegar
- 2 Tbsp. olive oil
- 2 Tbsp. water
- 1 pkt. (1.25 oz.) A.1. Original Marinade Mix
- 1 beef sirloin steak (2 lb.), 3/4 inch thick, cut into 1-1/2-inch chunks Whole Foods 1 lb For $7.99 thru 02/09
- 4 red peppers, cut into 1-1/2-inch pieces
- 4 cups hot cooked long-grain white rice
- 1 green onion, chopped
- 1 Tbsp. chopped fresh parsley
- Mix first 4 ingredients until blended; pour over meat in shallow dish.
- Refrigerate 30 min.
- to marinate.
- Heat grill to medium heat.
- Thread meat and peppers alternately onto 8 skewers.
- Grill 5 to 7 min.
- or until meat is done and peppers are crisp-tender, turning occasionally.
- Combine remaining ingredients.
- Serve with kabobs.
