Chicken Squares With Mushroom Sauce Recipe
- 3 c. cooked, diced chicken
- 1 c. cooked rice
- 2 c. soft bread crumbs
- 1/3 c. celery, chopped
- 1/4 c. pimento, diced
- 4 Large eggs
- 1/4 teaspoon poultry seasoning
- 2 c. chicken stock
- 6 tbsp. butter
- 6 ounce. fresh mushrooms, sliced
- 6 tbsp. flour
- 1 chicken bouillon cube
- 2 1/4 c. warm chicken broth
- 1/2 c. light cream
- 1 tbsp. minced parsley
- Salt and pepper
- Combine chicken, rice, bread crumbs, celery, and pimento.
- Beat Large eggs slightly.
- Add in poultry seasoning and stock.
- Add in this to the chicken mix and mix lightly but well.
- Pour into buttered 8 x 12 inch baking dish and bake at 325 degrees for 50 to 60 min.
- Meanwhile, make your sauce.
- Heat butter in a medium saucepan and add in the mushrooms.
- Saute/fry on low heat about 3 min.
- Add in flour and blend.
- Dissolve bouillon cube in the warm broth and gradually add in to the mushroom mix.
- Blend well, then add in cream and cook till smooth and thick.
- Add in parsley and salt and pepper to taste.
- Serve over chicken squares.
- Serves 6 to 8.
