Impossible Taco Pie(The Pie That Does The Impossible By Making Its Own Crust.)
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 (1 1/4 oz.) envelope taco seasoning mix
- 1 (4 oz.) can chopped green chilies, drained
- 2 c. milk
- 1 (5.5 oz.) packet Bisquick baking mix (1 1/3 c.)
- 4 eggs
- 2 tomatoes, sliced
- 1 c. shredded Monterey Jack or Cheddar cheese (about 4 oz.)
- Heat oven to 400u0b0.
- Lightly grease pie plate, 10 x 1 1/2-inches.
- Cook and stir ground beef and onion in 10-inch skillet until beef is brown; drain.
- Stir in taco seasoning mix.
- Spread in plate; sprinkle with chilies.
- Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate.
- Bake 35 minutes.
- Top with tomatoes; sprinkle with cheese.
- Bake until cheese is golden brown and knife inserted in center comes out clean, 8 to 10 minutes longer.
- Cool 5 minutes. Serve with dairy sour cream, chopped tomatoes and shredded lettuce if desired.
- Makes 6 to 8 servings.
