Mocha Crunch Oatmeal

  1. Bring water to a boil.
  2. Stir in oats, salt, espresso, and cocoa.
  3. Reduce heat to medium-low and cook, stirring often, 25-30 minutes, uncovered.
  4. Scots tradition says oatmeal should only be stirred with a wooden rod (called a spurtle), never a spoon or anything metal.
  5. I use the handle of a thick wooden spoon.
  6. When the desired consistency is achieved, stir in sugar and serve.
  7. Top with chips, nuts, and/or cream.
