Grilled Pork Skewers

  1. Cut the pork into ten 1 1/2-ounce rectangle-shaped pieces.
  2. Season pork with salt, pepper, paprika, oil, and fresh thyme.
  3. Place pork under plastic wrap and pound into thin rectangle pieces.
  4. Weave the pork pieces onto the wooden skewers to fill the skewers, not too crowded, but some curling will be necessary (see video).
  5. Grill over high heat for 2 to 3 minutes per side.
  6. Place skewers on a platter and coat with Alabama White BBQ Sauce.
