Grilled Pork Skewers
- 1 lb. pork sirloin
- 1 tbsp. salt
- 1 tsp. Black pepper
- 1 tsp. paprika
- 2 tbsp. extra-virgin olive oil
- 2 tsp. fresh chopped thyme
- 8 wooden skewers
- Cut the pork into ten 1 1/2-ounce rectangle-shaped pieces.
- Season pork with salt, pepper, paprika, oil, and fresh thyme.
- Place pork under plastic wrap and pound into thin rectangle pieces.
- Weave the pork pieces onto the wooden skewers to fill the skewers, not too crowded, but some curling will be necessary (see video).
- Grill over high heat for 2 to 3 minutes per side.
- Place skewers on a platter and coat with Alabama White BBQ Sauce.
