Mangu Mash

  1. Bring 1-1/2 cups of the water and 2 tsp.
  2. of the salt to boil in large saucepan on medium-high heat.
  3. Add plantains; cook 20 min.
  4. or until soft.
  5. Reduce heat to medium; cover.
  6. Simmer an additional 15 min.
  7. Remove from heat; drain.
  8. Mash plantains, adding milk and remaining 1/2 cup water until consistency of mashed potatoes.
  9. Stir in butter, bacon, garlic and remaining 1/4 tsp.
  10. salt.
  11. If necessary, return to stovetop to cook on low heat until heated through, stirring occasionally.
