Roast Potatoes With Roasted Garlic and Onion
- 1 head garlic
- 3 medium onions, halved and sliced into thin half-mmons
- 8 medium new potatoes, unpeeled and cut in half
- 180 ml stock
- salt and pepper
- Preheat oven to 400F/200C/Gas mark 6.
- Separate the head of garlic into cloves.
- Hit each clove smartly with a kitchen mallet.
- Remove and discard the skin.
- scatter the crushed cloves and the onion slices on the bottom of a baking dish that will hold the halved potatoes in one layer.
- Place the halved potatoes, cut sides down on the bed of garlic and onions.
- Pour in stock to come about 1/4 up the sides of the dish.
- Sprinkle salt and pepper evenly over all.
- Bake uncovered for 1 hour, until the potatoes are tender, the onions beginning to brown and the liquid about gone.
- Serve piping hot.
- Encourage diners to mash the garlic, onion and potatoes together if they wish.
