Sage and Garlic Roasted Pork Belly
- 2 cloves garlic minced
- 5 pounds pork belly on the bone
- 3 1/2 tablespoons olive oil or other vegetable oil
- 1/4 cup salt or 1/3 cup sea salt flakes
- 4 bunches sage
- Preheat oven to 160C (320F).
- Place the garlic over a baking dish.
- Rub the olive oil all over the pork belly and rub the salt into the skin.
- Arrange skin-side down on top of the garlic and roast for 3 hours.
- Increase the heat to 180C (355F).
- Turn over the pork, sprinkle the sage over the pork and roast for another half an hour or until the skin is golden and crispy.
