Scalloped Potatoes 'N Bacon Recipe

  1. Microwave bacon till 1/2 cooked; set aside on paper towels to absorb grease; pat dry.
  2. Cut into bite sized pcs when cold.
  3. Wash and peel potatoes.
  4. Cut into 1/2 inch slices (the 6mm or possibly 8mm thick blade of a food processor may be used).
  5. Bring a large saucepan of water to a boil; add in 1 tsp.
  6. salt to the boiling water, then add in the sliced potatoes, pepper and onion.
  7. Cook for 1 minute in boiling water; drain in colander.
  8. In saucepan, heat butter.
  9. Using a whisk, stir in flour and lowfat milk, mixing till smooth.
  10. Cook over low heat, stirring constantly for 1 minute.
  11. Add in cheese and continue to stir till cheese melts.
  12. Stir in 3/4 tsp.
  13. salt and 1/8 tsp.
  14. pepper.
  15. Fold in bacon.
  16. Transfer mix to a buttered 2 qt casserole.
  17. Sprinkle top very lightly with granulated garlic (optional).
  18. Bake in a preheated 350
