Brad's greek style sloppy joes

  1. in a large skillet heat a bit of olive oil.
  2. add onion garlic and red pepper.
  3. saute for 3-4 minutes.
  4. add beef and brown.
  5. when meat is cooked, drain any excess fat.
  6. add to skillet; diced tomatoes, tomato sauce, lemon juice, bouillon, vinegar, all spices, bay leaf, and brown sugar.
  7. bring to a boil and reduce heat.
  8. simmer on low for 10-15 min.
  9. or until sauce reduces to a thicker sloppy joe sauce.
  10. if u are in a hurry, add a little tomato paste at this point and it will speed up the process.
  11. meanwhile start the bechamel sauce by melting butter in a sauce pot.
  12. add flour and cook roux until it browns and has a nutty aroma.
  13. stir constantly
  14. add warm milk to roux stirring constantly.
  15. if u add to fast flour will get lumpy
  16. when all milk is mixed in bring mix to a bubble.
  17. stir often.
  18. when bubbly add half of the mix to the beaten egg slowly while stirring egg.
  19. whisk egg and sauce together and slowly add back to the sauce pot.
  20. when all is incorporated back together take off heat and let cool.
  21. season to taste with above seasonings.
  22. while sauce is cooling toast buns.
  23. plate bottom bun.
  24. add dijon mustard if desired.
  25. pour sloppy joe mix on bun.
  26. top with bechamel sauce.
  27. top with feta cheese.
  28. add top bun.
  29. and get a napkin.
  30. I served with a greek salad.
  31. lets face it i have to offset this bad boy somehow.
