Ham Hock And Lima Beans Recipe
- 1 pound pkg. dry large lima beans
- 1 pound smoked ham hock
- 1 lg. onion, minced
- 2 lg. celery stalks, minced
- 2 lg. carrots, peeled and minced
- 2 pepper corns
- Healthy pinch of grnd nutmeg
- Salt to taste
- In large bowl, cover dry beans with 6 to 8 c. cool water.
- Let stand overnight.
- Drain beans reserving water.
- In large pot, place ham hock with at least 3 c. reserved water.
- Cover and heat to boiling; simmer ham hock 30 min.
- Add in beans and remaining ingredients except salt.
- Add in more water if necessary just to cover beans.
- Simmer 1 hour or possibly till beans and ham hock are tender.
- Add in salt if you like.
