Potato and Ham Soup

  1. In a large pot, melt butter.
  2. Add onion and salt; saute until onion is softened.
  3. Sprinkle with flour and saute for 2 minutes.
  4. Gradually whisk in stock.
  5. Add potatoes and ham; bring to a boil, stirring often.
  6. Cover and reduce heat.
  7. Simmer until potatoes are tender.
  8. Stir in cream and pepper.
  9. Serve garnished with chives.
