Potato and Ham Soup
- 3 tablespoons butter
- 1 onion, chopped
- 1 teaspoon salt
- 3 tablespoons flour
- 5 cups chicken stock
- 1 12 lbs yukon gold potatoes, peeled and diced
- 12 ounces ham, cut in small dice
- 12 cup whipping cream
- 12 teaspoon black pepper
- 14 cup chopped fresh chives
- In a large pot, melt butter.
- Add onion and salt; saute until onion is softened.
- Sprinkle with flour and saute for 2 minutes.
- Gradually whisk in stock.
- Add potatoes and ham; bring to a boil, stirring often.
- Cover and reduce heat.
- Simmer until potatoes are tender.
- Stir in cream and pepper.
- Serve garnished with chives.
