Futako Tamagawa Cheesecake

  1. Making the crust: Remove the cream from the Oreos, crumble, add in unsalted butter melted in the microwave, and mix.
  2. Pack Step 1 into a mold covered with parchment paper, and chill in the fridge to harden.
  3. Filling: Mix the cream cheese softened in the microwave and the sour cream together well.
  4. Add in the sugar and eggs and stir.
  5. It is fine if the eggs appear to separate at first.
  6. They'll soon blend in.
  7. Add and mix in the heavy cream, rum, a and vanilla extract, and mix in the corn starch last.
  8. This order is important!
  9. Strain the batter, and pour into the mold.
  10. This little step will really improve the quality of your cake so don't skip it!
  11. Bake it in a double boiler at 160C for 70 minutes.
  12. You could use a pie pan that's wider than the cake pan for the double boiler.
  13. Let cool as-is inside the oven after baking.
  14. I bake it at night and take it out in the morning, but if you don't have the time, leave it be for at least two hours.
  15. Chill well in the fridge after cooling.
  16. You're all done.
