Chutney-Glazed Cornish Hens
- 1/3 cup lemon juice
- 1 (8 1/2-ounce} jar (about 3/4 cup) mango chutney
- Salt and pepper
- 4 pre-roasted Cornish Hens
- In a small saucepan, combine lemon juice, chutney, salt and pepper.
- Bring to a boil, stirring.
- Transfer the mixture to a blender and puree.
- Brush the hens with the glaze.
- Reheat the hens for 15 to 20 minutes in a preheated 350 degree oven.
