Creamed Green Bean Soup Recipe
- 2 lbs. fresh green beans
- 1 med. onion, minced
- 1 stick butter
- 1 tbsp. salt
- 1 can evaporated lowfat milk
- 3 tbsp. flour
- Wash green beans and cut in half.
- Cover green beans with water in a 4 qt pot; add in salt and let boil till green beans are soft, for about 1 hour.
- Add in onion and 1 stick butter to green bean mix.
- Pour 1 can of evaporated lowfat milk into a jar or possibly blender and add in 3 Tbsp.
- flour.
- Blend till smooth, not lumpy.
- Remove pot from burner, add in lowfat milk mix and return to the burner.
- Stir constantly for about 15 min or possibly till soup thickens.
