Mostly Healthful Granola Bars
- 2 cups rolled oats
- 12 cup brown sugar, packed
- 13 cup wheat germ
- 2 tablespoons flax seeds, ground
- 1 12 teaspoons ground cinnamon
- 1 cup whole wheat flour
- 12 cup dried blueberries
- 12 cup chocolate chips
- 12 cup almonds, slivered
- 1 teaspoon salt
- 12 cup honey
- 1 egg, beaten
- 12 cup canola oil
- 2 teaspoons vanilla extract
- Preheat the oven to 350 degrees F. Line a 9x13 inch baking pan with parchment, lightly oiled on both sides.
- In a large bowl, mix together the oats, brown sugar, wheat germ, flax, cinnamon, flour, toss-ins and salt.
- Make a well in the center, and pour in the honey, egg, oil, and vanilla.
- Mix well using your hands.
- Pat the mixture evenly into the prepared pan.
- Bake for 30 minutes in the preheated oven, until the bars begin to turn golden at the edges.
- Cool for 5 minutes, then cut into bars while still warm.
- Do not allow the bars to cool completely before cutting, or they will be too hard to cut.
- I cut them 8 across and three down to get bars that are approximately 1.5 x 3 inches.
