Fajita Egg Skillet (Bob Evans Skillet Copycat?)
- 12-1 lb stew meat
- fajita seasoning mix (http -- or /mexican.food.com or recipe or fajita-seasoning-mix-28011)
- 6 eggs
- 12 cup salsa
- 12 cup shredded cheese
- 12 green pepper, chopped
- 12 red pepper, chopped
- 12 onion, chopped
- Brown stew meat in pan.
- Add fajita seasoning mixed in a cup of water and simmer for 15 minutes or until sauce thickens.
- While meat is cooking, start to scramble eggs in a separate pan.
- As eggs start to set, add salsa, cheese, peppers, and onion.
- When meat is done, cut into small pieces or shred and add to egg skillet.
- Serve hot.
