Crispy Baked Cod

  1. Preheat oven to 400F.
  2. Cut filets into 3-4 inch wide pieces.
  3. In a medium bowl mix panko and potato flakes together.
  4. Brush both sides of filets with mayonnaise the coat well with crumb mixture and place in a greased baking dish in a single layer.
  5. Bake for 35-40 minutes or until fish is flaky and crumbs are crispy browned.
  6. Serve with lemon butter sauce.
