Crispy Baked Cod
- 3 lb fresh cod
- 3 tbsp hellmans mayonnaise
- 1 cup seasoned panko crumbs
- 1 cup instant potato flakes
- Preheat oven to 400F.
- Cut filets into 3-4 inch wide pieces.
- In a medium bowl mix panko and potato flakes together.
- Brush both sides of filets with mayonnaise the coat well with crumb mixture and place in a greased baking dish in a single layer.
- Bake for 35-40 minutes or until fish is flaky and crumbs are crispy browned.
- Serve with lemon butter sauce.
