Spanakopita (Spinach Pie)

  1. Saute scallions in 2 tablespoons melted butter.
  2. Combine with eggs, spinach, and cheese.
  3. Place 8 pastry steets, each brushed with melted butter, in a greased 13x9x2-inch pan.
  4. Place spinach mixture evenly over pastry sheets.
  5. Top with remaining pastry sheets, having top sheet well buttered.
  6. Bake at 350F for 1 hour and 15 minutes.
  7. Cut into squares or diamond shapes.
  8. Serve hot.
  9. Spanakopeta freezes well.
