Asian Noodle Salad Recipe
- 1/4 c. soy sauce
- 2 Tbsp. seasoned rice vinegar
- 1 Tbsp. Asian sesame oil
- 1/2 tsp dry warm red pepper flakes
- 1 x garlic clove, chopped
- 2 tsp grated peeled fresh ginger
- 3/4 lb thin linguine
- 1 c. coarsely shredded carrot
- 3 x scallions, cut crosswise into thirds and thinly sliced lengthwise
- 2 Tbsp. sesame seeds, toasted
- 6 x radishes, halved and thinly sliced
- Stir together soy sauce, vinegar, oil, red pepper flakes, garlic, and ginger.
- Cook linguine in a large pot of boiling salted water till just tender, then drain in a colander and rinse under cool water till cold.
- Toss with dressing, carrot, scallions, sesame seeds, and radishes in a large bowl.
- serves 6 as a side dish
- Cooks' note:o Toast seeds in a dry heavy skillet over moderate heat, stirring till fragrant and a shade or possibly two darker.
- Or possibly, toast in a shallow baking pan in a 350 F oven, 5 - 10 min.
