Family Chowder (Microwave)

  1. Place oil in a large microwave-safe dish.
  2. Microwave on high for 30 seconds.
  3. Add bacon, onion and garlic, cook for 1-2 minutes.
  4. Mix in vegetables, (except corn) and stock.
  5. Cook uncovered for 10 minutes Stir in corn.
  6. Blend flour with milk to a smooth paste.
  7. Stir into soup.
  8. Cook uncovered for 6-8 ins or until thickened.
  9. Stir in parsley & seasonings.
  10. Sprinkle with parmesan & serve with crusty bread.
  11. Optional - Swirl in cream before serving.
