Beef and Bacon Pie
- 1kg beef mince
- 3 rashers bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 2 onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 tablespoons flour
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- 1 carrot, grated
- 1 potato, grated Safeway 2 pkg For $5.00 thru 02/09
- 1 parsnip, grated
- 1 cup water
- 1/3 cup tomato paste
- 1 tablespoon VEGEMITE
- 2 sheets ready rolled puff pastry
- 1 egg yolk, lightly beaten
- Heat a large heavy-based saucepan over high heat and cook beef in batches, until browned.
- Add the bacon and onion and saute for 3-4 minutes until onion is tender.
- Stir in the flour, spices, carrot, potato, parsnip, water, tomato paste and Vegemite*.
- Bring to the boil then simmer, covered, for 15 minutes.
- Pour into a 2.5 litre baking dish or 6 individual oven-proof ramekins and top with pastry.
- Trim the edges, brush with egg yolk and make two small slits in the centre of the pie.
- Decorate with pastry cut outs, if desired.
- Place pie dish on an oven tray and bake at 200C for 10-15 minutes until lightly browned.
- Serve immediately.
