Pesto Tortellini

  1. In a large pot of boiling water, boil the tortellini according to the package directions, until tender.
  2. Drain, return pasta to the pot, and toss with the pesto sauce.
  3. Set aside.
  4. In a large non-stick skillet over medium heat, stir fry the asparagus, zucchini and broccoli until crisp tender, about 4-5 minutes.
  5. Add the tortellini with pesto sauce and the water and stir to combine everything.
  6. Allow to heat through, then stir in the grape tomatoes and serve.
  7. Sprinkle with Parmesan cheese and bacon and serve hot.
  8. Enjoy!
