Easy Toaster Oven Madeleine Cakes
- 100 grams Pancake mix
- 5 tbsp Olive oil
- 2 tbsp Sugar
- 1 Egg
- 1 dash Vanilla extract
- Combine the egg, sugar, olive oil, vanilla extract in a bowl and mix well.
- Stir in the pancake mix.
- Use 2 spoons to scoop the batter into small aluminum cups.
- Caution: They will rise so only fill the cups 60%.
- Bake them in a toaster-oven for 10 minutes at 1000 W. If they start to burn midway, cover with aluminum foil until done.
- You could also mix 1 teaspoon of lemon juice into half of the batter to make lemon madeleine cakes.
- They will have a refreshing flavor.
