Fudgy Peanut Butter Chip Muffins
- 12 cup applesauce
- 12 cup quick-cooking rolled oats
- 14 cup butter, softened
- 12 cup granulated sugar
- 12 cup light brown sugar, packed
- 1 egg
- 12 teaspoon vanilla extract
- 34 cup flour
- 14 cup cocoa or 14 cup Dutch-processed cocoa powder (recommend Hershey's)
- 12 teaspoon baking soda
- 14 teaspoon cinnamon (optional)
- 1 cup peanut butter chips (or semi-sweet chocolate for variety)
- powdered sugar (optional)
- Mix applesauce and oats in a small bowl.
- Beat butter, sugars, egg and vanilla until well blended.
- Stir in the applesauce mixture, blending well.
- Stir together the next 4 dry ingredients and blend into the butter mixture.
- Fold in the peanut butter chips.
- Fill 12 paper lined muffin cups 3/4 full of batter.
- Bake in a 350 degree oven for 22-26 minutes or until a toothpick inserted in the middle comes out almost clean.
- If desired, sprinkle with powdered sugar when slightly cooled.
