Potato Fried Cakes
- 1 cup mashed potatoes
- 2 cups sugar
- 3 tbsp. lard, melted
- 3 eggs
- 3 cups flour
- 1 cup buttermilk
- 1 tsp. baking soda
- 2 tsp. baking powder
- Salt, to taste
- Nutmeg, to taste
- Mix all ingredients together.
- Roll out on floured board and cut with round cookie cutter.
- Drop one-by-one in a deep fryer and cook to a light brown.
- Drain.
