Pineapple Squares
- crust;
- 2-1/2 cup Graham wafer crumbs
- 1/4 cup melted butter
- 2-1/4 cup icing sugar
- 1/4 cup melted butter
- 2 eggs, well beaten
- 1 can (250) crushed pineapple, drained
- 1 cup whipping cream, beaten
- Crust: Combine crumbs and butter.
- Reserve 1/4 cup for topping.
- Press remaining crumbs into a 2 liter greased cake dish.
- Filling: Cream butter and icing sugar.
- Blend in eggs; beat until smooth.
- Spread over crust.
- Top with layer of crushed pineapple then whipping cream.
- Sprinkle remaining crumbs on top.
- Freeze 24 hours.
- Serve frozen.
