Single Serving Cream Cheese Pies Recipe
- 2 pkg. (8 ounce. each) cream cheese, softened
- 2 Large eggs
- 1 teaspoon vanilla
- 1 tbsp. lemon juice
- 3/4 c. sugar
- 1 pkg. vanilla wafers
- 2 cans cherry pie filling
- 36 cupcake papers
- Mix Large eggs, cream cheese, vanilla, lemon juice and sugar till smooth.
- Put 1 vanilla wafer in each cupcake paper.
- Spoon mix over each vanilla wafer, filling only 1/2 full.
- Bake for 12-15 min per pan at 350 degrees.
- They shouldn't feel mushy when you remove from oven.
- Cold in refrigerator till ready to use.
- Remove individual pies from pans and arrange on tray.
- Spoon cherry pie filling on top of each and serve.
