Coconut Banana Bread
- 1 12 cups flour
- 12 cup coconut
- 1 12 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 12 cup chopped pecans or 12 cup walnuts (optional)
- 12 cup maraschino cherry, drained,cut in pieces,a nice addition especially at holiday time (optional)
- 2 eggs
- 1 cup sugar
- 12 cup butter or 12 cup margarine, melted
- 1 cup mashed banana (the riper the better)
- 12 teaspoon almond extract (a little more if you prefer)
- Preheat oven to 350.
- Spray a 9x5x3" loaf pan with cooking spray.
- Set aside.
- Combine the flour, coconut, baking powder, baking soda, salt, and the nuts and cherries (if using).
- Set aside.
- In a large bowl, beat the eggs until light and fluffy.
- Add the sugar and melted butter to the eggs, mixing well.
- Stir in the bananas and almond extract.
- Slowly add the flour mixture to the banana mixture, stirring just to combine (don't overmix).
- Pour into the prepared loaf pan and bake for 1 hour.
- Remove from oven and let stand for about 10 minutes before removing from pan.
