Stuffed Sweet Bell Peppers
- 3 large sweet bell peppers halved
- 4 tablespoons vegetable oil
- 10 ounces smoked sausage
- 2 medium onions diced
- 2 each sweet bell peppers diced
- 4 each celery stalks diced
- 2 each bay leaves
- 3 cloves garlic minced
- 2 tablespoons gumbo file powder
- 1/2 cup scallions, spring or green onions
- 1/4 cup parsley leaves chopped
- 1 can tomato sauce
- 1 can tomatoes crushed
- 8 ounces crab meat
- 1 pound crawfish tails cooked
- 3 1/2 cups rice cooked
- 4 dash red hot pepper sauce
- 4 dash worcestershire sauce
- Heat oil.
- Add sausage, veggies and bay leaf.
- Cook 5 minutes.
- Add file, green onions, parsley and tomatoes.
- Simmer 20 minutes.
- Add remaining ingredients and mix well.
- Put mix into bell peppers.
- Top with crumbs.
- Drizzle oil on top.
- Bake at 400F (200C).
- for 20 to 25 minutes.
