Sweet Garlic Soup
- 6 slices white bread
- 2 tablespoons butter
- 3 -4 whole heads garlic
- salt
- fresh ground pepper
- 3 12 cups chicken stock
- 6 egg yolks (optional)
- 1 14 cups creme fraiche or 1 14 cups heavy cream
- Start cooking about 35 min before serving.
- Trim off the crusts from the bread slices & set aside.
- Separate and peel garlic cloves.
- Half-fill a large sauce pan with water, add garlic and bring to a boil.
- Pour off water.
- Refill pan with water and return to a boil.
- Pour off the water.
- Add chicken stock to pan and simmer over low heat until the garlic begins to soften, about 7-8 minute
- Note: Cooking may be stopped here when preparing in advance.
- When ready to finish, return stock and garlic to a simmer.
- Add bread slices and bring to a boil.
- Stir in the creme fraiche and return to a boil.
- Pour soup into a food processor or blender, add butter, season with salt and pepper and process until smooth.
- Pour into individual soup bowls and add a fresh egg yolk to each just before serving.
