Sweet Garlic Soup

  1. Start cooking about 35 min before serving.
  2. Trim off the crusts from the bread slices & set aside.
  3. Separate and peel garlic cloves.
  4. Half-fill a large sauce pan with water, add garlic and bring to a boil.
  5. Pour off water.
  6. Refill pan with water and return to a boil.
  7. Pour off the water.
  8. Add chicken stock to pan and simmer over low heat until the garlic begins to soften, about 7-8 minute
  9. Note: Cooking may be stopped here when preparing in advance.
  10. When ready to finish, return stock and garlic to a simmer.
  11. Add bread slices and bring to a boil.
  12. Stir in the creme fraiche and return to a boil.
  13. Pour soup into a food processor or blender, add butter, season with salt and pepper and process until smooth.
  14. Pour into individual soup bowls and add a fresh egg yolk to each just before serving.
