Blondie's Mom's Hoppin' John
- 1 cup dried black-eyed peas
- 4 cup water
- 3 tsp salt
- 4 slice bacon, cut into 1 inch pieces
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 tsp pepper
- 1 tbsp minced fresh parsley
- 1 cup uncooked long grain white rice
- 1 can (14 1/2 ounces) whole tomatoes with liquid, chopped
- 4 cup water
- Cover peas with water.
- Allow to soak several hours, or overnight.
- Drain peas.
- In a large saucepan, combine peas with water and salt.
- Simmer over medium low heat 1 hour, or until peas are tender.
- Drain peas, reserving 2 cups liquid.
- Saute' bacon, onion, and bell pepper until bacon is crisp.
- DO NOT DRAIN.
- In a 2 quart saucepan, combine peas, reserved liquid, the saute' mixture, rice, pepper, parsley, and tomatoes.
- Cover and simmer 1 hour, or until liquid is absorbed and rice is thoroughly cooked.
- *This recipe makes about 9 cups of Hoppin' John.
