Blondie's Mom's Hoppin' John

  1. Cover peas with water.
  2. Allow to soak several hours, or overnight.
  3. Drain peas.
  4. In a large saucepan, combine peas with water and salt.
  5. Simmer over medium low heat 1 hour, or until peas are tender.
  6. Drain peas, reserving 2 cups liquid.
  7. Saute' bacon, onion, and bell pepper until bacon is crisp.
  8. DO NOT DRAIN.
  9. In a 2 quart saucepan, combine peas, reserved liquid, the saute' mixture, rice, pepper, parsley, and tomatoes.
  10. Cover and simmer 1 hour, or until liquid is absorbed and rice is thoroughly cooked.
  11. *This recipe makes about 9 cups of Hoppin' John.
