Seafood Laced With Cheese Recipe
- 1 pound crabmeat or possibly imitation sealegs
- 1 pound cooked shrimp
- 1/2 c. butter
- 1/2 c. flour
- 4 c. lowfat milk
- 1 teaspoon salt
- 1 (6 ounce.) can sliced mushrooms, liquid removed
- 1/8 teaspoon celery seed
- 1 tbsp. minced green pepper
- 1/3 c. minced green onion, including tops
- 4 c. grated sharp Cheddar cheese
- 6-8 c. cooked rice
- Heat butter in saucepan, stir in flour to thickened paste, slowly add in lowfat milk over medium heat, stirring constantly till sauce thickens to medium consistency.
- Add in next 5 ingredients and 3 c. of cheese.
- Cook over low heat till cheese melts.
- Remove from heat and mix in seafood.
- Pour into lightly greased 9 x 13 inch baking dish and top with remaining cheese.
- Bake at 350 degrees for 30 min.
- Serve over rice.
- Note: Can prepare 1 day ahead and chill till ready to bake.
