Secret Weapon Toddler Muffins
- 1 12 cups zucchini, grated (don't drain it)
- 1 (4 ounce) jar carrot baby food
- 12 cup rolled oats (quick oats will save you the soaking step)
- 14 cup white flour
- 38 cup whole wheat flour (I used white wheat)
- 38 cup spelt flour
- 38 cup sugar
- 18 cup brown sugar
- 1 egg
- 12 teaspoon baking soda
- 12 teaspoon baking powder
- 12 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 18 cup walnuts, chopped
- Preheat oven to 325 degrees F and grease a muffin pan.
- Combine zucchini, baby food, oats, flours, egg, sugar, and vanilla in a bowl.
- The mixture will be dry, just be patient and combine well.
- Let this mixture sit for about 15 minutes or long enough for the oatmeal to soak up some of the liquid.
- Add the baking soda, baking powder, salt, and cinnamon, mixing well.
- Stir in the walnuts.
- Scoop the batter into muffin pan and sprinkle with cinnamon.
- Bake for approximately 25 minutes (or until a toothpick inserted in the center comes out clean).
