Baked Zucchini with Rice
- 3 zucchini
- 3 eggs
- 2 cup rice
- 1 tsp dry vegetable mix
- 3 tbsp milk
- 180 ml yoghurt
- 2 tsp salt
- 3 tbsp oil
- Cut zucchini in halves, salt them well over and fry with 2 tablespoon oil for about 40 minutes on 200F.
- Cook 2 cups of rice with 1 teaspoon of vegetable mix and 1 teaspoon salt until soft.
- Drain water.
- Take zucchini from the oven.
- Drain sauce in the separate bowl, add 3 eggs, 1 tablespoon oil and 3/4 of the cooked rice.
- Put 3 tablespoons of milk over the zucchini, then put rice and egg mix and decorate with the remaining 1/4 of the rice.
- Put back in the oven for about 40 minutes to get a nice crisp.
- Take the dish out of the oven and cut in three parts.
- Serve with grilled/boiled sausages and/or yoghurt.
