Baked Zucchini with Rice

  1. Cut zucchini in halves, salt them well over and fry with 2 tablespoon oil for about 40 minutes on 200F.
  2. Cook 2 cups of rice with 1 teaspoon of vegetable mix and 1 teaspoon salt until soft.
  3. Drain water.
  4. Take zucchini from the oven.
  5. Drain sauce in the separate bowl, add 3 eggs, 1 tablespoon oil and 3/4 of the cooked rice.
  6. Put 3 tablespoons of milk over the zucchini, then put rice and egg mix and decorate with the remaining 1/4 of the rice.
  7. Put back in the oven for about 40 minutes to get a nice crisp.
  8. Take the dish out of the oven and cut in three parts.
  9. Serve with grilled/boiled sausages and/or yoghurt.
